Where the times come from

Every time on this site is computed, by the formula below, from figures that Masterbuilt, Traeger, ThermoWorks and Smoking-Meat.com state on their own pages. Each page names the guides its figures come from and the day they were read. No text or table of theirs is reproduced; only the numbers are restated.

The formula

A source states a time at its own smoker temperature. This site restates it at 225°F by dividing by f(T) = 1 − (T − 225) / 150, where T is the middle of the temperature the source gives, and multiplies back by f(T) for 250, 275 and 300°F. A time given per pound is then multiplied by the weight. Where two sources disagree, the page shows the lowest and the highest of their restated figures as the range. The factor is fitted to ThermoWorks' reported pork butt cooks of about 16 hours at 225°F and about 8 hours at 300°F.

Times are rounded for display to a 5-minute step at every length: the lower figure down, the upper figure up, and a single figure to the nearest step.

What this site is not

It is not a food-safety authority. The safe minimum internal temperatures are the U.S. Food and Drug Administration's, and a thermometer, not a time, says when meat is done.
